Cinnamon Apple Paleo Muffins

Ingredients:

  • 1 cup almond flour
  • 1 cup unsweetened finely shredded coconut
  • 2 eggs
  • 1 large apple, cored, peeled and diced
  • 2 tbsp olive oil
  • 2 tsp almond butter
  • 1/4 cup agave syrup
  • 1/2 tsp cinnamon
  • 1/2 tsp salt
  • dash of nutmeg

Instructions:

  1. Mix all ingredients and divide evenly into a muffin tin
  2. Bake 15 min @ 375F
  3. Makes 1 dozen

  1. 275F really? Seemed way too low for me and took longer than 15 mins to bake. However, the result was delicious! I would try 375F.
