Cauliflower and Leek Soup

Ingredients:

  • 2 tbsp olive oil or coconut oil
  • 3 leeks cut into 1 inch pieces
  • 1 large cauliflower head cut into small pieces
  • 3 cloves garlic minced
  • 8 cups chicken broth
  • salt and pepper to taste
  • (optional) 1 cup almond milk (or coconut milk)

Directions:

  1. Saute leeks, cauliflower and garlic in oil for approximately 10 min over medium heat
  2. Add broth and simmer for 45 min
  3. Using a blender, carefully blend soup in small amounts at a time.
  4. Season with salt and pepper and add almond/coconut mild if desired.
  5. Continue blending until creamy consistency

Turkey Meatloaf

Ingredients:

  • 2lb lean ground turkey
  • 1 egg, whisked
  • 2 tbsp coconut aminos
  • 1 tsp each of garlic powder, salt, pepper
  • 1/2 cup each of chopped onion, green pepper, celery

Directions:

  1. Preheat oven to 375F
  2. Combine all ingredients in a large mixing bowl
  3. Lightly grease a loaf pan with coconut oil
  4. Pour ground turkey mixture into the loaf pan
  5. Bake @ 375F for 1 hour
  6. Remove from oven and cool for 10 min
